Join Josh Allen to learn how he designs and uses key performance indicators and data to improve operations at his 30-year-old family bakery, Companion Baking in St. Louis.  Josh will talk us through critical KPIs that impact his product, team, customers and bottom line, including employee turnover, trash efficiency and fill rates.  You will come away from this session with concrete ideas for how you can more effectively measure, and manage, your bakery.


Josh started Companion Baking in St. Louis in 1993 at the age of 24.  His vision was clear and concise: create wholesome and delicious European breads with simple ingredients.  Starting with just six breads in its product line, Companion quickly made a name for itself, receiving orders from various local restaurants and specialty stores.  Today, Companion's award-winning bread is served in more than 200 local restaurants, grocery stores and businesses around St. Louis and beyond.
