Cookies for a Happy Life

Instructor: Jeffrey Hamelman

In this class, we will make four distinctly different cookies, one each from the U.S., Italy, France, and Germany. The specific techniques required to make each of the cookies will be discussed in detail, from mixing the dough to presentation of the finished products. A special focus will be on the method for tempering chocolate, which is how one of the cookies will be finished. Once learned, the techniques can be applied to innumerable other products. Batch sizes will be small, however each of the cookies can easily be adapted to larger scale production. As with all Guild classes, there will be ample time for questions and answers.

All registrations include a live zoom link to participate and interact in real time as well as formulas and process notes emailed ahead of the class.
