ABOUT THE INSTRUCTOR Maggie Longo brings more than 30 years of experience in the food and hospitality industry as a baker, pastry chef, bakery operator, and business owner, including leading a commercial scratch bakery and owning Rhode Island’s first Roman-style pizzeria. She currently serves as a business advisor with the Rhode Island Small Business Development Center, where she helps bakery and food business owners understand costs, pricing, and financial performance, with a focus on COGS calculations, P&Ls, and practical financial systems that support sustainable growth.
