Constructing a Masterpiece:
11-Layer Cake with Auzerais Bellamy

This is not “a” cake, this is “the” cake. From top to bottom, every single layer is intentional - each layer serves its own purpose, while working in harmony with the others to create edible fabulousness.  Not to mention, the cake is absolutely gorgeous to look at. Stacked to the sky with chocolate and golden hues, it’s truly an unforgettable centerpiece for any table and the next demo in our Celebration Bakes Series.

Sitting pretty at six inches in diameter, this cake feeds 6-12 people (or keep it all for yourself - that’s okay, too) and Blondie Guru, Auzerais Bellamy, will take participants through it layer by layer in this interactive demo.

Skill Level: Beginning to Professional

Auzerais grew up in Hayward, Calif., baking for her family and experimenting with recipes. She graduated magna cum laude with a degree in pastry arts from Johnson & Wales and interned at Alain Ducasse’s pastry school in France before a decade-long career in fine dining. She staged at Michelin-starred establishments The French Laundry in California and Daniel and Per Se in New York and worked as the executive pastry chef at Brooklyn’s Pies ‘n’ Thighs and Ducasse’s Benoit Bistro. In 2015 as the pastry sous chef at Thomas Keller’s Bouchon Bakery, Auzerais became frustrated with the lack of representation in fine dining and set out to change the industry. Auzerais found her soul as an entrepreneur and, as Blondery grows, is creating the supportive workplace she sought by hiring people of color and empowering them for careers in the restaurant industry.

In the event that your class is cancelled due to low enrollment, or other circumstances, we will notify you as soon as possible by email and issue you a full refund. 


If you cancel your reservation with more than a 15 day notice:

  • Refund (less a $50 cancellation fee) if the class has a waiting list and we are able to fill your spot.
  • Account credit (less a $50 cancellation fee) for a future class if the class is not full.
