From White to Wheat: Pastries Revisited

Wake up to the world of whole grain breakfast pastries: sweet and savory scones, tea cakes, and more. We’ll discuss using freshly milled flours vs packaged, explore different varieties of whole grains and their flavor profiles as well as how to begin incorporating whole grains into your product line. 

All registrations include a live zoom link to participate and interact in real time as well as formulas and process notes emailed ahead of the class.

Avery Ruzicka, a two-time James Beard Finalist, discovered her love of bread in her family’s kitchen baking parker house rolls and poppyseed prune loaves. After graduating from the University of North Carolina at Chapel Hill she moved to New York City to attend the French Culinary Institute. There her love of bread became a passion and the beginning of a career. She completed both the Culinary Degree and the Bread Program and then staged at Per Se under master baker Ben Hershberger. Moving to California to work at Manresa Restaurant she became the baker there in 2012 and founded the Manresa Bread Project in 2013. It would become Manresa Bread the following year.

Cancellations

In the event that your class is cancelled due to low enrollment, or other circumstances, we will notify you as soon as possible by email and issue you a full refund. 

Refunds

If you cancel your reservation with more than a 15 day notice:

  • Refund (less a $50 cancellation fee) if the class has a waiting list and we are able to fill your spot.
  • Account credit (less a $50 cancellation fee) for a future class if the class is not full.

If you cancel your reservation with less than a 15 day notice:

  • Account credit (less a $50 cancellation fee) for a future class if the class has a waiting list and we are able to fill your spot.
  • No refund and no credit if the class is not full.
