Galette des Rois

A French tradition dating back to the middle ages, the Galette des Rois (The King’s Cake) is served only during the month of January to celebrate Epiphany. Composed of a puff pastry cake, with a small charm, the fève, hidden inside, it is usually filled with frangipane. In this demo, father and son duo, Pierre and Nico Zimmermann will walk you through their authentically French formula and you will learn how to make your own personalized Galette des Rois. Join us and let the fève choose the king of your crew!

All registrations include a live zoom link to participate and interact in real time as well as formulas and process notes emailed ahead of the class.

Pierre Zimmermann owns La Fournette, a wholesale and retail bakery in Chicago, IL. He is a native of Alsace, France, a Master Baker, and is a World Baking Champion having won the Coupe du Monde de la Boulangerie twice (once as a team member and once as coach).

In 2015 he was the President of the jury for the Louis Lesaffre Cup, and served on the jury for the Bakery Masters from 1992-2010. He has been awarded numerous medals in France for his work teaching and baking (including the prestigious Bretzel d’Or), and is the creator of Macaron Day in Chicago, a fund-raiser for Esperanza Community Services.

He moved to Chicago to create the artisan bread program at the French Pastry School. With Solveig Tofte, he co-founded in 2016 the Intergalactic Bakers Federation, a new international organization inspired to be useful to our communities through education and volunteer work.

He is also a member of the Elite de la Boulangerie Internationale and, in 2011, was the first master baker to be inducted into the North American chapter of the Academie Culinaire de France, the oldest and most prestigious French culinary organization.

Despite growing up in a bakery in France, becoming a baker was not an obvious choice from the beginning for Nicolas Zimmermann (Nico). His baking career really began in 2010 when his family moved to the US. Having received professional training at The French Pastry School in Chicago and La Boulange in San Francisco, Nico took his skills to the stage as part of Team USA in 2020 at the Coupe du Monde de la Boulangerie. Nico resides in Chicago and is carrying on his family trade as a baker at La Fournette.

In the event that your class is cancelled due to low enrollment, or other circumstances, we will notify you as soon as possible by email and issue you a full refund. 


If you cancel your reservation with more than a 15 day notice:

  • Refund (less a $50 cancellation fee) if the class has a waiting list and we are able to fill your spot.
  • Account credit (less a $50 cancellation fee) for a future class if the class is not full.
